City Chicken
A deceptively named dish, city chicken is a poultry-less dish. At the turn of the 20th century, the price of chicken was out of reach for many American families and the trend of mock chicken recipes emerged. City chicken is one such recipe, developed by the Polish and Ukrainian communities in the Great Lakes region.
If it’s not chicken, what exactly is city chicken? According to allrecipes.com, the dish traditionally consists of “cubes of pork, veal or both, which are threaded onto skewers, battered with flour and breadcrumbs, and baked or deep-fried.”
